I wholeheartedly believe that Maya Grill at Coronados Springs is an unearthed treasure of Disney restaurants. Especially if you're looking for a more low-key dining experience, where you can sit, relax and take your time enjoying your meal.

While visiting Maya Grill I always start off with the Chips and Salsa ($6) because let's face it, if it's an option I'm getting it. The salsa here is very reminiscent of the one you get at La Cava del Tequila in the Mexico Pavilion in the way that they both have a smokey factor to it, which I really like. You can also opt for some Guacamole ($12) thought if salsa isn't your jam.

Mexican food, in general, is usually pretty easy to make Dairy-Free, usually it's just a matter of removing the cheese or sour cream from a dish. On this visit, I opted to try out their Pescado a la Veraruzana ($28) which is Red Snapper served Veracruz-style with Roasted Tomatoes, Peppers, Onions, Garlic, Capers and Olives served with Cilantro White Rice.

This was delicious. There's always a chance when ordering a white fish that it's going to be dry and flavorless but even without combining it with the sauce, the fish itself had great flavor and was far from dry. The capers gave the sauce a good saltiness which I wasn't expecting and all-around combining all the components on the dish made for a very balanced taste.

Also a big shoutout to our waitress, Sari. We've had her the last few times we have visited and have taken to requesting her. She is super attentive, knows her stuff, has a good sense of humor and is just an all-around great waitress. So definitely request her if you stop by.
